Prep
- Peel and cut sweet potatoes into 1-inch cubes, dice the onion, mince the ginger and garlic, and rinse the lentils until the water runs clear.
Sauté aromatics
- Heat 1 tablespoon oil in a 6-quart Dutch oven over medium heat; add the onion and a pinch of salt and cook 4–5 minutes until translucent, then add ginger and garlic and cook 60–90 seconds.
- Stir in the curry paste or ground spices and cook 30 seconds to bloom the spices.
Cook lentils
- Add the rinsed lentils and 3 cups vegetable broth, bring to a simmer, cover partially, and simmer gently for 12 minutes until tender but not falling apart; taste one lentil and add 2–3 more minutes if still too firm.
Add potatoes and coconut
- Stir in the sweet potato cubes and the can of shaken coconut milk, bring back to a gentle simmer, cover, and cook 12–15 minutes until potatoes are fork-tender.
Thicken and finish
- Whisk 2 tablespoons cornstarch into 1/3 cup cold coconut milk or water to make a smooth slurry. Remove pot from heat and temper the slurry with a ladle of hot stew, then stir the warmed slurry back into the pot and simmer gently 2–3 minutes until slightly thickened.
- Stir in the chopped kale and simmer 1 minute until wilted, then add lime juice, soy sauce, and salt to taste.
Serve
- Serve hot with chopped cilantro and lime wedges; spoon over rice or with warm flatbread if desired.
Notes
Use brown or green lentils for the best texture; red lentils will break down into a thicker stew. If the stew is too thin, temper a cornstarch slurry off heat and simmer until thickened. Store in airtight containers in the fridge up to 4 days or freeze portions up to 3 months.
